Mushy Peas

1lb frozen peas.
2 sticks spring onions.
Small handful fresh mint, leaves only.
Olive oil
Butter
Salt and pepper

In a medium pot, melt butter, then cook spring onions, 3-4minutes,
Then add peas, and mint, and let steam for approx 5 minutes with lid on.
Add butter, mash all together, or use a food processor
Season carefully with salt and pepper.
Done!


Onion Gravy

A thick onion gravy is the perfect sauce for many meat dishes. With this recipe for onion gravy it is quick and simple to make. Great with Bangers (sausages) and mash, roast meat or a filling for Yorkshire puddings.

Prep Time: 5 minutes
Cook Time: 20 minutes

Ingredients:

2 medium onions, peeled and thinky sliced
2 tbsp vegetable oil
2 tbsp butter
1 tsp sugar
1 tsp balsamic vinegar
750ml beef stock
4 tsp corn starch/corn flour
4 tsp cold water
Salt and black pepper

Preparation:
Melt the oil and butter in a large saucepan over a gentle heat.
Add the onion and cover with a lid. Cook slowly for approx 10 mins or until the onions are soft and translucent.
Add the sugar and balsamic vinegar to the onions and stir well.
Cover with the lid and continue to cook for a further 5 minutes.
Add the stock and boil gently uncovered for 5 minutes.
In a heatproof jug or bowl mix the corn starch/flour with the cold water to a thin paste.
Pour a little of the hot gravy into the starch mixture and mix thoroughly.
Pour the starch mixture back into the gravy, raise the heat to high and boil for 10 minutes or until the gravy is slightly thickened.
Keep warm until ready to serve.

ANZAC Biscuits

ANZAC Biscuits have long been an Australian tradition. Baked by the wives and sweethearts of the Australia New Zealand Army Corps (ANZACs) fighting abroad in Gallipolli during World War I, ANZAC biscuits were able to survive the long sea voyage as they contained no milk or eggs. Made with rolled oats, butter, Golden Syrup and desiccated coconut, these "cookies" have a unique flavor, due to the Golden Syrup. Make sure you use butter and not butter substitute, both for the consistency and the flavor. (You can get your Golden Syrup from the Australian Pie Company store in Burien!)

Ingredients:
1 cup rolled oats
1 cup plain flour
1/2 cup sugar
3/4 cup unsweetened dessicated coconut
1/2 cup butter
2 T Golden Syrup
1/2 tpn bicarbonate of soda
1 T boiling water
Pinch salt

Preparation:
1. Mix oats, flour, sugar and coconut together.
2. Melt syrup and butter together.
3. Mix soda with boiling water and add to melted butter and syrup.
4. Add to dry ingredients.
5. Place tablespoonsful of mixture on greased slide.
6. Bake in slow oven, 150-160 degrees C (310-320 degrees F) for 20 minutes.
